Garlic Butter Shrimp With Galletti and Broccoli
There are few things in life that I find more comforting than pasta! Growing up in an Italian household I could probably eat it EVERY day for EVERY meal!
This is one of my favorite pasta dishes and it is really easy!
1 1/2 lbs of Galletti pasta (you could really use any shape you want)
1/2 of a small onion chopped fine
2 cloves garlic chopped fine
3 Tablespoons of Butter
2 Tablespoons of Olive Oil
3/4 lbs of medium sized peeled and de-veined raw ship
1/2 lb broccoli florets
Salt and Pepper to taste
Parm cheese for garnish
Bring a pot of water to a boil and add your pasta. About 3 minutes before your pasta is done add the broccoli. While your pasta is cooking heat your olive oil and butter over low heat. Add the onion and garlic and sauté until the onion is translucent. Add the shrimp and cook through. When your pasta is al dente drain it off reserving a small amount of water to add to your sauce. Add the pasta, broccoli and about 1/2 cup of your cooking liquid to the shrimp. Mix through to coat the pasta with the oil and butter. Add Salt and Pepper to taste. Serve with Parmesean cheese.
