If your kitchen is anything like mine by the middle of summer your vegetable drawer is full of a bunch of these things!
I’m always looking for fun and new ways to use all the wonderful squash I can get my hands on through out the summer. A few days ago I had a housewarming party and in looking for some new “healthy” appetizers and decided to have some fun with my squash. These Summer Squash Towers is delicious and simple to make.
Ingredients:
3 Small Zucchinni
3 Small Yellow Squash
Sun-dried Tomatoes
Goat Cheese (or tangy cheese of your choice)
Salt and Pepper (to taste)
Olive Oil
Tooth Picks to hold your stacks together
How To:
Cut your squash into circles about 1/4 inch thick. Lay out on a cutting board and sprinkle with Olive oil and them salt and pepper to taste.
You can do this next part on the grill or in a grill pan on your stove. Place the squash onto the grill seasoned side down.
While the squash is cooking season the other side with Olive Oil and Salt/Pepper.
Grill squash for about 4 minutes on each side or until you have some nice grill marks and the squash is tender.
Start to assemble your tower by placing a slice of Zucchini on the plate. Spread a small amount of the goat cheese (remember a little goes a long way). Next layer on a sun-dried tomato* a piece of Yellow Squash, some more goat cheese and then top with another slice of Zucchini.
Add a small toothpick into the tower to keep it from falling down. While I LOVE the way this taste while it is still warm, it is just as good a room temperature.

I have been looking for something to do with the yellow squash my parents have in their garden. This is perfect and sounds delicious! I will have to go get some and try it out!

What a great idea for all the squash I have to use up! I just used a bunch today to make a garden vegetable soup which was delicious but I seem to have a never ending supply even after giving a bunch away!
