I’m sure it is no secret that I LOVE to bake, and that I LOVE to eat what I bake even more! After years and years of trying to perfect a homemade cake that I LOVE I have come to the conclusion that on occasion a completely homemade cake is great, for the most part it is easier and just as tasty to doctor up a box mix and make it amazing! That is what makes this Peaches and Cream cake taste so great!
1 Box of your favorite vanilla cake (prepared in two 8 inch pans)
**5 Medium peaches, peeled and sliced
1/4 Cup Packed Brown Sugar
2 Tablespoons Butter
1/4 teaspoon Salt
Whipped Cream (Fresh or Store bought is fine)
Start by melting the butter and brown sugar in a non stick pan until the sugar dissolves and starts to bubble slightly. Add the peaches to the sugar, coat well and add salt. Cook peaches over low heat until the sugar mixture starts to thicken and the peaches have softened slightly.
Move the peach mixture to a container and cool in the fridge while your cake is cooking.
Once the cake has cooked and cooled completely start by taking a small amount of the liquid from your peaches and coating the bottom layer of cake. Spread just enough whipped cream over the bottom layer to just cover the cake then top with your peaches and enough whipped cream just to hold the top piece of cake on. Cover the top layer of cake with whipped cream and serve.
This cake is not only yummy it is also a great light dessert for your end of summer parties!
